Achiote Marinade & Barbecue Sauce For Beef Recipe
Ingredients:
1 c of ride-wine vinegar
2 tsps of cumin (ground)
1/4 c of water
3 cloves garlic; minced
1 tsp of crushed pepper (red)
4 tbsps of anchiote-paste
Salt
Ground pepper (black)
1/4 c of oil (olive)
1 dry chile (Pasilla)
1 c of boiled water
3/4 c of marinade
1 Tbsp of oil
Instructions:
Combine water, vinegar, cumin, cloves, 2 tsps of acnhiote-paste, crushed pepper, salt, pepper & 1/4 c of olive-oil. Mix well.
You toss very thin beef-sirloin slices w/ prepared marinade in bowl. Have this refrigerated for 6-8 hrs or more. Have meat drained then reserve 3/4 c marinade. Have meat thread into skewers.
For sauce: You remove & discard pasilla seeds. Chop them coarsely then cover w/ boiled water. Let them soak about 20-30 mins then drain.
Place in processor w/ anchiote-paste & oil, then puree. You pour in 3/4 c marinade, blending ’til smoothened.
Brush mixture on skewered meat then broil ’til done. Baste w/ marinade many times.
