Adobo Sauce Recipe
Ingredients:
1/2 c of vinegar (white)
2 c of water
1/4 c of oil (olive oil)
2 pcs of onions (medium); sliced thinly
5 pcs of garlic cloves (medium); sliced
1 Tbsp of cumin (ground)
4 c of stock (chicken)
2 Tbsps of sugar (brown)
1/4 c of juice (orange)
1/4 c of juice (lemon)
2 Tbsps of tomato paste
1 tsp of pepper (black, freshly ground)
12 pcs of chiles (Ancho); wiped clean
Instructions:
Toast chiles on an iron-cast skillet till brown and soft; stir constantly to prevent burning. Transfer on the saucepan then add water and vinegar; let it boil. Once boiling, reduce heat then let it simmer for 10 mins.
Transfer on a processor; process till paste becomes smooth, add one tablespoon water when needed, making it thin.
Place on the side. Heat oil on a medium-sized saucepan above moderately high heat then saute onions for 8 to 10 mins till golden.
Add garlic then cook for a while then add cumin; cook for one min. Add saved (chile) paste and stock; let it boil. Once boiling, reduce the heat and let it simmer for 20 mins.
Combine juices, (brown) sugar, salt, pepper, and (tomato) paste; mix thoroughly. Add onto simmering mixture of stock; cook for 15 mins.
