Amatriciana Sauce Recipe
Ingredients:
1/3 c of oil (olive oil)
4 pcs of onions; chopped coarsely
8 oz of cut up bacon strips (or sliced smoked ham)
4 pcs of garlic cloves; crushed or minced
2 cans of tomatoes (plum, in juice)
or
4 c of tomatoes
2 tsps of sugar
3/4 c of wine (red, dry)
Salt (to taste)
Black pepper (freshly ground)
Instructions:
Heat the oil on a saucepan above moderately high heat then add onions. Saute them for ten mins then add garlic along with bacon; saute them for five mins, while stirring frequently.
Add sugar, wine, and tomatoes; stir thoroughly. Let it simmer for forty-five mins, uncovered; stir frequently.
