An Uncommon Pasta Sauce Recipe
Ingredients:
1 c of chopped onion
2 Tbsps of oil (olive oil)
3 c of water (boiling)
3 oz of halved tomato (sun dried, no oil)
1 pc of garlic clove (large); quartered
1 tsp of salt
1/4 tsp of pepper (black)
2 Tbsps of chopped parsley
1 Tbsp of chopped basil (fresh, or 1 tsp dried)
2 tsps of chopped oregano (fresh, or 3/4 tsp dried)
2 tsps of juice (lemon)
Instructions:
Saute the onion with oil on a skillet above moderate heat for 5 min. Combine tomatoes and water inside a bowl then set on the side for 2-3 mins.
Remove one-third of tomatoes then set on the side. Place remaining mixture of water/tomato with garlic inside the processor; process till pureed.
Add the puree along with saved halves of tomato onto the skillet; let it boil. One boiling, reduce the heat then simmer slowly for 10 mins.
Add salt, pepper, parsley, basil, oregano, and lemon juice; stir thoroughly and let it simmer for one min. Take out from the heat then serve hot over cooked pasta. Sprinkle Parmesan.
