Anglo-Indian Curry Sauce Recipe
Ingredients:
2 Tbsps of oil (mild vegetable oil)
1 c of onion; chopped coarsely
1 pc of fresh ginger (one inch); peeled
1-1/2 lbs of tomatoes (red ripe); cored and quartered
1/4 c of cilantro; chopped
1/2 tsp of cayenne
1 tsp of salt
1-1/4 tsps of garam masala (or curry powder)
Instructions:
Heat the oil on a skillet above moderate heat then add the onions; stir-fry for 12-15 mins till onions become caramel-brown.
Take out from the heat and place on the blender. Add ginger, cilantro, tomatoes, salt, and cayenne; puree till mixture has smoothened.
Transfer on a saucepan then add garam masala; stir thoroughly and cover. Cook above moderate heat for 15-18 mins till tomatoes release their (raw) aroma.
