Baked Sole With Lemon Sauce Recipe
Ingredients:
2 lbs of sole fish (fresh or frozen)
1 tsp of salt
1/4 tsp of pepper (black)
3 Tbsps of butter (unsalted)
2 pcs of egg yolks (large)
1 Tbsp of water
1 Tbsp of flour (all purpose)
3/4 c of broth (chicken)
2 Tbsps of juice (lemon)
1 pc of olives (green, stuffed)
Instructions:
Preheat oven at 350 degrees F. Butter a shallow (baking) dish then arrange the fish fillets inside. Sprinkle salt & pepper and dot two tablespoons of butter. Place inside preheated oven and bake at bout 10 mins.
Combine water and yolks inside the cup then mix well and set on the side. Heat one Tablespoon of butter on a saucepan then add flour; stir thoroughly till blended well.
Gradually add the juice and broth; stir thoroughly and cook while stirring till mixture becomes thick.
Take out from the heat then add 6 to 8 drops hot sauce onto the mixture of yolks then stir thoroughly.
Gradually pour the mixture of yolks onto the sauce; stir vigorously to prevent lumping. Continue cooking till thick, while stirring; don’t boil.
Spoon out liquid from the dish then pour the sauce onto the fillets. Garnish stuffed olives.
