Barbecue Sauce Recipe
Ingredients:
1/2 tsp of ground cayenne-pepper
1/2 tsp of pepper (white)
1 tsp of garlic seasoning
1 tsp of onion seasoning
1 tsp of salt
1 & 1/2 tsps of pepper (black)
1/2 pound of minced bacon
1 & 1/2 c of onions; chopped
2 c of pork stock
3/4 c of dry pecans; roasted & chopped
1 & 1/2 c of chili-sauce
1 c of honey
5 Tbsps juice of orange
Orange rind & pulp (half-orange)
2 Tbsps juice of lemon
2 Tbsps garlic; minced
Lemon rind & pulp
4 Tbsps of butter; unsalted
1 tsp of Tabasco-sauce
Instructions:
Combine black & white pepper, salt, onion & garlic powder and cayenne pepper in small sized bowl then set this mixture aside.
Have bacon fried in saucepan placed over high-heat ’til crisp. Add onions then cook w/ cover for 8-10 mins ’til onions turn dark-brown, stir occasionally. Add prepared mixture of spices then cook it about 60 secs.
You add Tabasco sauce, garlic, orange & lemon pulp & rinds, juices, pecans, honey, chili-sauce & stock, stir well. You adjust into low-heat then cook for 10 more mins.
You remove the rinds then continuously stir while cooking for 15 more mins. You add butter & stir ’til melted. You remove the pan from the heat.
Cool for 30 mins then you pour onto blender, process for 10-15 secs ’til bacon & pecans are finely-chopped.
