Basic Brown Sauce Recipe
Ingredients:
3 Tbsps of butter
2 onions (large); chopped
1 unpeeled carrot (large); scrubbed & chopped
1 chopped celery stalk
1/4 c of flour (unbleached)
1 garlic clove; crushed
6 c of browned stock
1 garni bouquet
1/3 c of pureed tomatoes
Instructions:
Have butter melted in thick saucepan placed over mid-heat. You add onion, celery & carrots. Saute ’til golden. Add flour then adjust into low-heat. Stir while cooking ’til veggies & flour are browned.
Add stock followed by garlic, garni & pureed tomatoes. Simmer about 60 mins, stirring occasionally ’til sauce is reduced into half. Pass through sieve as necessary then cool. Chill then skim excess oil before having it used.
