Basic Vegetarian Tomato Sauce Recipe
Ingredients:
1 pc of carrot (fresh)
1 pc of celery (stalk)
1 pc of onion (medium)
1 Tbsp of parsley; chopped
5 pcs of basil (leaves)
1/3 c of oil (olive oil)
35 oz of canned tomatoes (plum); drained
or
4-1/2 lbs of tomatoes (fresh)
1/2 tsp of salt
Pepper (black, freshly ground)
Instructions:
Place carrot, onion, celery, basil, and parsley inside the processor; chop them together finely. Warm oil on a skillet then saute chopped vegetables for ten mins; stir occasionally.
Place tomatoes on a processor; process till pureed then transfer onto the skillet. Add salt along with lots of freshly ground pepper.
Let it simmer then cook above very gentle heat, covered partially, for two hrs. Transfer on a processor; process till smooth.
