Basic White Sauce With Milk (Bechamel) Recipe

Ingredients:

1 c milk (nonfat)
1 pc of small onion
2 Tbsps of carrot; grated
1/8 tsp of nutmeg (freshly grated)
1/8 tsp of pepper (white)
2 Tbsps of instant milk (dry, nonfat)
1 Tbsp of cornstarch (or arrowroot)
2 Tbsps of flour

Instructions:

Combine carrot, milk, pepper, onion, and nutmeg inside a saucepan; let it boil and cover. Take out from the heat the let it steep, at about 10 mins.

Pour mixture through the strainer and press down the vegetables to get all juices out. Let it cool through.

Combine the (dry) milk, flour, and cornstarch then add 1-2 tab of cooled mixture of milk; stir thoroughly till paste becomes smooth.

Return milk on saucepan then add (flour) paste; stir above moderate heat till mixture becomes thick and boiling. Cover then place inside the refrigerator.

To use, add little stock or wine, making it thin.
