Basil Anchovy Sauce Recipe
Ingredients:
1 c of wine (Chablis)
1/2 c of vinegar (white wine)
8 pcs of garlic cloves (medium); chopped
6 pcs of anchovy fillets
2 pcs of shallots (medium); chopped
1 pc of basil bunch
2 pcs of egg yolks (large)
Juice from 1 pc of lemon
1/4 c of oil (olive oil, extra virgin)
Salt & Pepper, to taste
Instructions:
Combine Chablis, vinegar, shallots, anchovies, and garlic inside a saucepan above medium-low heat. Let it simmer for 8-10 mins till liquid has reduced into 1/4-cup. Strain liquid and place on an electric blender.
Add basil onto blender then puree till smoothened. Add juice from lemon and yolks; blend till pureed smoothly. Gradually add oil, while blending continuously. Season salt & pepper.
