Basil Sauce Recipe
Ingredients:
1 Tbsp of butter (unsalted)
6 pcs of shallots; sliced thinly
4 pcs of garlic cloves; sliced thinly
1 c of wine (Chablis)
1 c of juice (clam)
1/4 c of vinegar (white wine)
1/4 c of cream (heavy)
Juice from 1 pc of lemon
1/2 lb of butter (sweet); cut to pieces
1/2 pc of basil bunch; stemmed
Salt, to taste
Instructions:
Place one tablespoon butter on a saucepan above medium-high heat till it melts. Add garlic and shallots; saute for 2-3 mins till shallots soften. Add Chablis, vinegar, and (clam) juice; cook for 15-20 mins till reduced into 1/4-cup.
Add juice from lemon and cream then reduce heat into low; let it simmer for 1-2 mins till liquid begins to be thick.
Increase heat into medium then gradually add butter pieces while constantly whisking. Strain mixture onto the blender.
Add basil onto blender and puree till smooth. Season salt & pepper then add little water when sauce becomes very thick.
