Beef Medallions With Sour Cream Sauce Recipe
Ingredients:
2 lbs of filet (beef)
3 Tbsps of butter (unsalted)
1/4 lb of mushrooms; sliced thinly
1 Tbsp of shallots; chopped finely
2 Tbsps of vinegar (red wine)
2 Tbsps of capers
1 c of sour cream (dairy)
1 Tbsp of dill (fresh); chopped
Instructions:
Trim off all of fat on beef then cut crosswise to 12 pieces, equally, about half inch thick.
Melt two teaspoons butter inside a large skillet then cook the meat above medium-high heat for 35 to 40 seconds per side till browned; turning once. Transfer on a heated platter.
Cook mushrooms on used skillet; stir then add shallots then cook for 15 seconds. Add vinegar, capers, and (sour) cream; stir thoroughly and let it simmer gently.
Add in any juice that has dripped on platter. Take out from heat then add butter; swirl to melt.
Pour sauce onto the steak then around them. Sprinkle over dill.
