Bobbie’s Chili Sauce Recipe
Ingredients:
12 c of tomatoes (fresh); peeled then chopped
3 c of chopped celery
2 c of chopped onion
1 c of chopped pepper (green)
1/4 c of salt
2 c of sugar (refined)
1/4 c of sugar (brown)
1-1/2 tsps of pepper
1-1/2 tsps of mixed spice (pickling)
1 c of vinegar (white)
Instructions:
Combine tomatoes, celery, onion, pepper, and salt; let it stand for over a night. Drain them on a colander, don’t press down.
Place on a kettle then add sugars, pepper, and vinegar. Place the mixed spice inside a cheesecloth bag; add onto the kettle.
Let it boil then reduce the heat; let it simmer, about 15 mins. Fill onto sterilized jars; process them for ten mins.
