Chicken & Sausage In Tomato Sauce Recipe

Ingredients:

1/4 c of oil (olive oil)
2-1/2 lbs of sweet sausage links (Italian)
4 pcs of chicken (legs)
56 oz of tomatoes (canned)
Salt & Pepper (to taste)
1/2 c of wine (red, dry)
4 pcs of garlic cloves (large); chopped coarsely
1-1/2 lbs of hot sausage links (Italian)
4 pcs of chicken (thighs)
6 oz of tomato paste (canned)
1/2 Tbsp of basil (dried)
Parsley (fresh); chopped
Freshly grated cheese (Parmesan)

Instructions:

Heat the oil on a skillet above moderate heat. Add garlic then saute till golden brown; take them out then set on the side.

Prick sausages and sear on the used skillet; take them out then set on the side, covered. Cook chicken till browned on both sides; set on the side, covered.

Place a tablespoon of pan drippings onto a (Dutch) oven and discard the rest of drippings; place the used skillet on the side.

Crush tomatoes by hand then add onto drippings inside the pan. Add paste, basil, saved, garlic, salt, and freshly-ground pepper. Let it simmer about fifteen mins, uncovered.

Add sausage then let it simmer about twenty mins, covered. Add chicken then let it simmer about another twenty mins, covered.

Deglaze used skillet using the red wine and stir onto sauce; let it simmer about ten mins more. Sprinkle parsley.

Serve hot and sprinkle Parmesan on top.
