Chicken With Chocolate Sauce (Chicken Mole) Recipe

Ingredients:

4 Tbsps of oil (olive oil)
2 pcs of garlic cloves; chopped finely
Chicken (good for six persons); cut to bite-size pieces
1 pc of onion (medium); chopped
1 pc of pepper (green); chopped
3 pcs of pimiento slices (canned); chopped
2 pcs of tomatoes (large); seeded, peeled, and chopped
2 Tbsps of chili powder
2-1/2 c of broth (chicken)
1/4 c of raisins
1/4 c of almonds (slivered)
1/2 tsp of cumin (ground)
1/4 tsp of nutmeg (ground)
1/4 tsp of cloves (ground)
1/4 tsp of cinnamon (ground)
1/2 tsp of salt
1/4 tsp of pepper (black)
1 tsp of sugar (refined)
Grated zest from 1 pc of orange
2 pcs of bitter chocolate squares; chopped
1/4 c of rum (light)

Instructions:

Heat the oil on a saucepan and add garlic; cook for one min then add the chicken. Cook till browned; take them out and place on a plate.

Add onion, pepper, tomato, and pimiento on the saucepan with the drippings; cook for ten mins above low heat. Add powdered chili and blend thoroughly.

Add the broth, raisins, almonds, orange zest, and seasonings; let it simmer for half an hour, covered. Add chocolate and stir thoroughly till melted. Add the chicken and spoon over the sauce.

Bake inside the oven (350 degrees F) for one hour till chicken becomes soft. Warm the rum and ignite; pour onto the chicken and let it stand, till flame dies down. Serve.
