Marinara Sauce Recipe II
Ingredients:
3 Tbsps of oil (olive oil)
1 pc of onion (large); chopped coarsely
2 pcs of garlic cloves; chopped finely
1 pc of carrot (large); peeled then chopped
3/4 c of tomato paste (canned)
2 tsps of oregano (fresh); chopped
1/4 c of wine (red)
2 tsps of basil (fresh); chopped
1/2 lb of mushrooms (fresh); sliced
Salt & Pepper (to taste)
3 lbs of ripe tomatoes (Italian plum); peeled, seeded, then chopped
Instructions:
Heat oil on a skillet above moderate heat then add garlic and onion; saute for 5 to 8 mins till onions become translucent.
Add carrot, tomatoes, paste, oregano, basil, and wine; stir thoroughly and let it simmer for half an hour. Add mushrooms then season salt & pepper; let it simmer for another 5 mins.
