Piquant Thai Dipping Sauce Recipe
Ingredients:
1 Tbsp of cornstarch with 1 Tbsp ice water
1 tsp grated peel of lime
2 tsps coarsely-chopped leaves of mint
1 clove garlic; minced
1/4 tsp of Chinese-chili sauce
2 Tbsps of sugar (brown)
3 Tbsps juice of lime
1/4 c of tomato-juice
Instructions:
Combine the peel, mint, garlic, chili-sauce sugar, juice of line & tomato-sauce in saucepan. Boil then reduce the heat. Simmer & cook about 2 mins.
Adjust into low-heat & boil then add some of cornstarch-mixture to thicken the sauce lightly.
Pass through fine sieve into bowl then cool for 10 mins. Best when serve w/ shrimps that are chilled.
