Poached Salmon With Horseradish Sauce (Moret) Recipe
Ingredients:
1 small sliced carrot
4 c of water
2 tsps of horseradish
1 celery stalk; sliced
1 tsp of peppercorns
1 small sliced lemon
4 ounces of salmon-steaks
1/4 c of low-fat mayonnaise
1 & 1/2 tsps juice of lemon
1/4 c of plain non-fat yogurt
1 & 1/2 tsps of chives; chopped
Instructions:
Combine water, lemon, carrots, celery, onions & peppercorns in skillet placed over mid-high heat. Boil w/ cover then reduce the heat. Simmer for 10 mins then add the salmon. Have pan covered then simmer about 10 mins.
Have skillet removed from fire then stand for 8 mins. Transfer salmon into serving platters then serve w/ Horseradish-sauce.
For the sauce:
Combine mayonnaise, yogurt, horseradish, juice & chives. Have mixture covered then chill.
